COZZE E GIN, in the historic center of TRICASE, is the new restaurant designed by the brilliant Salento chef IPPAZIO TURCO. After the more formal LEMI and its fun apecar, LEMI COZZE E GIN bar is a newly designed bistro. The restaurant is small, only two rooms restored with taste but on summer evenings you can dine in the front square. In the first room there is a long bar counter, behind which 70 bottles of different gins are on display including those personally produced by IPPAZIO TURCO with local essences and cultivars.

On a blackboard, the proposals of the day are written; they are always different based on the daily offer from the territory and the sea: squid stuffed with sea urchin on almond cream, amberjack carpaccio with local chicory (puntarelle), cuttlefish crunch and celery yogurt, amberjack sausage on rape cream and broccoli, blue fish skewers ... all accompanied by sauces created by the chef.

The love for Salento and genuine local products together with a great creative capacity as well as a technique acquired in years of study and experience, makes IPPAZIO TURCO’s dishes really special. Sea and land are perfectly matched with modern and unexpected combinations. The freshest and highest quality raw materials are those offered by Salento area, with flavors and scents of the sea and the land of TRICASE.

It is no coincidence that, on the occasion of the DIOR fashion show in Piazza Duomo in LECCE in 2020, the creative artistic director of the French maison, Maria Grazia Chiuri, of Salento origins, chose the chef IPPAZIO TURCO for the preparation of the after show dinner at Palazzo Luce.
